Den finns mycket som kan g\u00e5 fel; att den blir f\u00f6r l\u00f6s, fel smak, sk\u00e4r sig osv.<\/p>\r\n<p>S\u00f6ker du runt p\u00e5 n\u00e4tet s\u00e5 m\u00e4rker du att recepten skiljer sig faktiskt r\u00e4tt mycket \u00e5t! Man kan allts\u00e5 g\u00f6ra bearnaise p\u00e5 m\u00e5nga olika s\u00e4tt och resultera i olika konsistens, olika smak och olika mycket disk och svordomar \ud83d\ude09<\/p>\r\n<p>I grunden \u00e4r en bearnaise egentligen en hollandaise som har kryddats lite mer. S\u00e5 kan du g\u00f6ra en s\u00e5 kan du nu \u00e4ven den andra \ud83d\ude42 Men det finns n\u00e5gra skillnader som t.ex. att i en hollandaise beh\u00f6ver du ingen reduktion eftersom du f\u00e5r in syran fr\u00e5n citronjuicen.<\/p>\r\n<p>Det h\u00e4r \u00e4r de gemensamma stegen och grundkomponenterna i princip alla recept p\u00e5 bearnaise:<\/p>\r\n<ol>\r\n<li>G\u00f6r en syrlig reduktion med vin\u00e4ger, vatten (ibland vitt vin), l\u00f6k och kryddor<\/li>\r\n<li>Rumstempererade \u00e4ggulor som vispas ihop med reduktionen \u00f6ver lagom v\u00e4rme (ca 60-65 grader) till en kr\u00e4mig emulsion. H\u00e4r brukar man anv\u00e4nda ett vattenbad alternativt s\u00e4tta en bl\u00f6t disktrasa mellan induktionsh\u00e4llen och sk\u00e5len du vispar i.<\/li>\r\n<li>Sm\u00e4lt sm\u00f6r och l\u00e5t det komma ner i 55-60 grader. H\u00e4ll sen i med en tunn str\u00e5le medan du kraftigt vispar in det i \u00e4ggskummet<\/li>\r\n<li>Krydda med dragon och eventuella andra smaks\u00e4ttare<\/li>\r\n<\/ol>\r\n<p>Det finns andra recept som anv\u00e4nder en mixer och det kanske \u00e4r smart om du ska g\u00f6ra en stor sats. Men passar inte lika bra om du bara ska g\u00f6ra en sats f\u00f6r 4 pers.<\/p>\r\n<p>Eftersom riktig bearnaise g\u00f6rs p\u00e5 sm\u00f6r s\u00e5 passar den b\u00e4st att servera varm direkt. Det blir inte alls bra att servera kylsk\u00e5pskall eller att f\u00f6rs\u00f6ka v\u00e4rma upp den i mikron. S\u00e5 g\u00f6r bara s\u00e5 stor m\u00e4ngd ni beh\u00f6ver till middagen. F\u00e4rdig bearnaise som du k\u00f6per \u00e4r gjord p\u00e5 olja s\u00e5 det \u00e4r d\u00e4rf\u00f6r den kan f\u00f6rvaras i kylen.<\/p>\r\n<p>Har f\u00f6rs\u00f6kt ta fram ett recept som \u00e4r enkelt att f\u00f6lja f\u00f6r vilken nyb\u00f6rjare som helst och som garanterar en perfekt konsistens.<\/p>\r\n<p>F\u00f6r att lyckas med detta recept beh\u00f6ver du ha en k\u00f6kstermometer och en ballongvisp.<\/p>\r\n<p>Smaken g\u00e5r dock att variera p\u00e5 en m\u00e4ngd olika s\u00e4tt.<\/p>\r\n<h2>S\u00e4tt att variera din bearnaises\u00e5s<\/h2>\r\n<ul>\r\n<li>Olika vin\u00e4ger eller olika f\u00f6rdelning mellan vatten och vin\u00e4ger<\/li>\r\n<li>\u00c4ndra vilken l\u00f6k du anv\u00e4nder i reduktionen. Ursprunget anv\u00e4nder schallottenl\u00f6k, men g\u00e5r bra med annan l\u00f6k ocks\u00e5!<\/li>\r\n<li>Ha i olika kryddor i reduktionen. Anv\u00e4nder du f\u00e4rska kryddor s\u00e5 passar det utm\u00e4rkt att ha i stj\u00e4lkarna. Om du anv\u00e4nder f\u00e4rsk eller torkad dragon spelar ingen st\u00f6rre roll faktiskt!<\/li>\r\n<li>Cayennepeppar, chili eller liknande f\u00f6r att f\u00e5 en chilibearneaise<\/li>\r\n<li>Worcestershires\u00e5s<\/li>\r\n<li>Dijonsenap<\/li>\r\n<li>K\u00f6rvel<\/li>\r\n<li>Persilja<\/li>\r\n<li>Tills\u00e4tt lite citronjuice<\/li>\r\n<li>Prova att bryna sm\u00f6ret<\/li>\r\n<li>Strunta i att sila reduktionen, men se d\u00e5 till att finhacka l\u00f6ken (och ta bara en liten schalottenl\u00f6k) och ha malna pepparkorn ist\u00e4llet f\u00f6r hela.
