Krispiga ugnsbakade potatisar som passar fint att servera till det mesta. Passar lika bra till<span style=\"font-size: inherit;\"> l\u00f6rdagsmiddagen som till ny\u00e5rsfesten.<\/span><\/p>\r\n<p>P\u00e5 Engelska brukar det skrivas Hasselback potatoes eller Potato \u00e0 la Hasselbacken.<\/p>\r\n<p>Hasselbackspotatisen anges ofta vara skapad \u00e5r 1953 av Leif Ellison\u00a0som var\u00a0kockelev\u00a0p\u00e5 restaurang\u00a0<a title=\"Hasselbacken, Stockholm\" href=\"https:\/\/sv.wikipedia.org\/wiki\/Hasselbacken,_Stockholm\" target=\"_blank\" rel=\"noopener\">Hasselbacken<\/a>\u00a0p\u00e5\u00a0Djurg\u00e5rden\u00a0i Stockholm, under ledning av k\u00f6ksm\u00e4stare Rune Erik Lager.<\/p>\r\n<p><span style=\"font-size: inherit;\">En variant av hasselbackspotatis \u00e4r den h\u00e4r <a href=\"https:\/\/ingmar.app\/blogg\/gratang-pa-hasselbackspotatis\/\">hasselbacksgrat\u00e4ngen<\/a> som blir kr\u00e4migare och \u00e4r lite enklare d\u00e5 man snabbt kan skiva all potatis. <\/span><\/p>\r\n<p><span style=\"font-size: inherit;\">I en vanlig hasselbackspotatis s\u00e5 skivar man ocks\u00e5 potatisen, men inte hela v\u00e4gen igenom. Det \u00e4r det h\u00e4r momentet som m\u00e5nga tycker \u00e4r pillrigt f\u00f6r man vill f\u00e5 tunna skivor, men inte sk\u00e4ra snett s\u00e5 man r\u00e5kar sk\u00e4ra av en bit, eller r\u00e5ka sk\u00e4ra f\u00f6r l\u00e5ngt s\u00e5 potatisen delas.<\/span><\/p>\r\n<h2>Hj\u00e4lpmedel f\u00f6r att f\u00e5 perfekt skivade hasselbackspotatis (och inte r\u00e5ka sk\u00e4ra rakt igenom)<\/h2>\r\n<ol>\r\n<li>Anv\u00e4nd en sk\u00e5lad tr\u00e4slev d\u00e4r du l\u00e4gger i potatisen (gillar inte detta d\u00e5 det blir instabilt och s\u00e5 g\u00e4ller det att du hittar en slev med r\u00e4tt urgr\u00f6pning)<\/li>\r\n<li>L\u00e4gg en tr\u00e4slev eller en till sk\u00e4rbr\u00e4da bakom potatisen som distans och s\u00e5 skivar du snett.<\/li>\r\n<li>L\u00e4gg potatisen precis bakom en tunn sk\u00e4rbr\u00e4da och med en stor kockkniv skivar du ner till sk\u00e4rbr\u00e4dan<\/li>\r\n<li>Anv\u00e4nd en potatisbr\u00e4da (jag har en s\u00e5dan)<\/li>\r\n<\/ol>\r\n<h2>Vilken potatis passar b\u00e4st till hasselbackspotatis?<\/h2>\r\n<ul>\r\n<li>Fast potatis passar b\u00e4st till hasselbackspotatis f\u00f6r den blir krispigare<\/li>\r\n<li>V\u00e4lj fint formade potatisar av samma storlek s\u00e5 dom blir klara samtidigt.<\/li>\r\n<li>Har du k\u00f6pt ekologisk potatis s\u00e5 beh\u00f6ver du inte skala dom, det r\u00e4cker med att tv\u00e4tta av dom. Men m\u00e5nga skalar potatisen f\u00f6r det visuellas skull.<\/li>\r\n<\/ul>\r\n<h2>Olika s\u00e4tt att variera Hasselbackspotatis<\/h2>\r\n<ul>\r\n<li>I vissa recept tar man ut dom efter halva tiden f\u00f6r att pensla med mer sm\u00f6r och l\u00e4gga p\u00e5 mer str\u00f6br\u00f6d. Jag har testat att g\u00f6ra s\u00e5 med h\u00e4lften och m\u00e4rkte ingen direkt skillnad. S\u00e5 jag skulle s\u00e4ga att det \u00e4r helt on\u00f6digt<\/li>\r\n<li>Ha p\u00e5 lite riven ost efter 30 min. R\u00e4tt kr\u00e5ngligt och gav ingen st\u00f6rre skillnad i smak (jag provade med parmesan). D\u00e4remot s\u00e5 ser dom ju inte riktigt ut som klassiska hasselbackspotatis.<\/li>\r\n<li>Anv\u00e4nda vitl\u00f6kssm\u00f6r eller annat smaksatt sm\u00f6r. Vi tyckte hasselbackspotatisen blev godast med vitl\u00f6kssm\u00f6r och det \u00e4r vad vi tagit med i receptet nedan.<\/li>\r\n<li>Ha p\u00e5 lite vitpeppar<\/li>\r\n<li>Experimentera att ha p\u00e5 kryddor som timjan, rosmarin, persilja, paprika, gr\u00e4sl\u00f6k, etc<\/li>\r\n<li>G\u00f6r vegansk hasselbackspotatis genom att byta ut sm\u00f6ret mot olja<\/li>\r\n<li>Blanda sm\u00f6ret med en klick pesto innan du penslar p\u00e5<\/li>\r\n<li>Lite pillrigt men lyxigt \u00e4r att peta ner ost mellan varje skiva och om du \u00e4ter k\u00f6tt s\u00e5 kan bacon passa bra in d\u00e4r ocks\u00e5.<\/li>\r\n<\/ul>\r\n<p>Tycker det \u00e4r lite konstigt att ICAs recept p\u00e5 Hasselbackspotatis rankar s\u00e5 bra. Deras tidsangivelse st\u00e4mmer inte. Hasselbackspotatis blir inte klart p\u00e5 30-40 min! K\u00f6kets recept \u00e4r heller inte bra med 1 dl str\u00f6br\u00f6d, det r\u00e4cker gott och v\u00e4l med 1 msk! Och varf\u00f6r ska alla h\u00e5lla p\u00e5 att fuska med tidsangivelserna! Att ha klart hasselbackspotatis p\u00e5 under 1 timme \u00e4r n\u00e4st intill om\u00f6jligt om man ska r\u00e4kna in tv\u00e4tta\/skala, skiva upp, osv.<\/p>\r\n<p>OBS!
