Heat up the oven to 225°C (435°F)
Peel and chop the onion and the garlic
Fry the onion and garlic in a big frying pan with some oil (for around 3 minutes until translucent)
Add tomato paste, crushed tomatoes, honey, stock, water,and thyme
Cook on medium heat for about 5 minutes then add the spinach and cook another 5 minutes. Taste it with some salt and pepper
Cut the halloumi in thin slices
Use an oven pan of around 20cm*30cm if you want three layers like in the photo
Start with adding the tomato sauce, then add one layer lasagne, then the halloumi. Continue like this and finish off with a layer of tomato sauce
Grate the cheese over and bake for around 20 min
