Mie goreng - Indonesian noodle wok

Ingredients
  

  • 2 eggs
  • salt
  • 250 g egg noodles
  • 1 onion
  • 4 garlic cloves
  • 1 bok choy
  • 2 tbsp sesame oil or neutral oil
  • 200 g fried tofu
  • 180 g bean sprouts
  • 2 tbsp kecap manis can replace with 1 part soy and 1 part brown sugar. Boil it to dissolve.
  • 2 tbsp soy sauce
  • 1 tbsp sambal oelek
  • 2 tomatoes

Instructions
 

  • Lightly beat the eggs and fry in a small pan with a little butter or oil. Add salt. Remove from the heat and slice into 1 cm thick slices.
  • Cook the noodles according to the instructions but reduce time with 30 seconds.
  • Peel and chop the onion. Peel the garlic. Rinse the pak choi and cut up (keep the white parts separated from the green).
  • Heat a wok pan with the oil. Fry the onion and the white part of the pak choi until soft. Add the garlic. Stir and fry for 1 min more.
  • Add the rest of the pak choi, tofu, noodles, kecap manis, soy and sambal oelek. Stir and let everything get hot. Add the eggs and bean sprouts and mix together.
  • Serve with tomato slices.
