Recipe: Browned butter lemon spaghetti with garlic

  • 50 g butter
  • 2 tbsp olive oil
  • 2 garlic cloves
  • 1 tsp lemon zest
  • 2 tbsp bread crumbs
  • 2 tbsp lemon juice
  • 300 g spaghetti
  • salt
  • black pepper
  • 50 g parmesan
  • basil leaves
  • pine nuts


  • Heat up the butter and let it boil until reaching the nutty smell
  • Boil pasta
  • Heat up a skillet with the olive oil and add minced garlic and lemon zest. Saute just a little so it starts to turn golden
  • Stir in bread crumbs and stir until toasted then remove from heat
  • Pour the garlic mixture into the brown butter pot along with the lemon juice
  • Pour browned butter mixture over the pasta (once drained) and season with salt and freshly ground black pepper
  • Toss with pine nuts (toast them quickly in a frying pan before to get a little extra taste out of it)
  • Serve with basil and finely shredded parmesan
