Recipe: Ostkaka – Swedish cheesecake

November 12, 2014 by Kalle Leave a Comment

Swedish cheesecake (ostkaka)

The Swedish cheesecake (or Swedish curd cake) is very different from an American cheesecake. In Sweden it is sometimes called “Småländsk ostkaka” (Cheesecake from Småland) which refers to the oldest and most traditional recipe using rennet and milk to create the cheese.

In our recipe we have made it simpler by using cottage cheese instead of rennet and milk.
