Recipe: Halloumi lasagna / lasagne with spinach

Halloumi lasagna with spinach Lasagne day is on July 29th and I wanted to share one of my favourite Lasagne recipes; Halloumi lasagna with spinach! This recipe is a bit faster than a traditional lasagna recipe by using fresh lasagne noodles and no need to make the bechamel sauce (also known as white sauce). I especially enjoy the texture with pieces of chewy halloumi cheese in it! Your choice of cheese to top it with can influence the taste quite a lot, I usually just take the cheese I have at hand.

Recipe: Halloumi lasagna / lasagne with spinach

Ingredients
  

  • 1 onion
  • 1 garlic clove
  • oil
  • 3 tbsp tomato paste
  • 500 g crushed tomatoes
  • 1 tsp honey
  • 1 cube stock
  • 400 ml water
  • 1 tsp thyme
  • 200 g frozen spinach
  • 450 g halloumi cheese
  • 250 g fresh lasagne sheets should cover at least 3 layers in your oven pan
  • 100 g cheese around 1 cup shredded
  • salt
  • black pepper

Instructions
 

  • Heat up the oven to 225°C (435°F)
  • Peel and chop the onion and the garlic
  • Fry the onion and garlic in a big frying pan with some oil (for around 3 minutes until translucent)
  • Add tomato paste, crushed tomatoes, honey, stock, water,and thyme
  • Cook on medium heat for about 5 minutes then add the spinach and cook another 5 minutes. Taste it with some salt and pepper
  • Cut the halloumi in thin slices
  • Use an oven pan of around 20cm*30cm if you want three layers like in the photo
  • Start with adding the tomato sauce, then add one layer lasagne, then the halloumi. Continue like this and finish off with a layer of tomato sauce
  • Grate the cheese over and bake for around 20 min
