Lasagne day is on July 29th and I wanted to share one of my favourite Lasagne recipes; Halloumi lasagna with spinach! This recipe is a bit faster than a traditional lasagna recipe by using fresh lasagne noodles and no need to make the bechamel sauce (also known as white sauce). I especially enjoy the texture with pieces of chewy halloumi cheese in it! Your choice of cheese to top it with can influence the taste quite a lot, I usually just take the cheese I have at hand.
Recipe: Halloumi lasagna / lasagne with spinach
Ingredients
- 1 onion
- 1 garlic clove
- oil
- 3 tbsp tomato paste
- 500 g crushed tomatoes
- 1 tsp honey
- 1 cube stock
- 400 ml water
- 1 tsp thyme
- 200 g frozen spinach
- 450 g halloumi cheese
- 250 g fresh lasagne sheets should cover at least 3 layers in your oven pan
- 100 g cheese around 1 cup shredded
- salt
- black pepper
Instructions
- Heat up the oven to 225°C (435°F)
- Peel and chop the onion and the garlic
- Fry the onion and garlic in a big frying pan with some oil (for around 3 minutes until translucent)
- Add tomato paste, crushed tomatoes, honey, stock, water,and thyme
- Cook on medium heat for about 5 minutes then add the spinach and cook another 5 minutes. Taste it with some salt and pepper
- Cut the halloumi in thin slices
- Use an oven pan of around 20cm*30cm if you want three layers like in the photo
- Start with adding the tomato sauce, then add one layer lasagne, then the halloumi. Continue like this and finish off with a layer of tomato sauce
- Grate the cheese over and bake for around 20 min
