Carrot cake the Swedish way! I have always loved carrot cakes and spent my fair share of time looking for the best carrot cake recipe. After trying out a few promising candidates I always come to the conclusion that I liked my mother’s version the best! Below you’ll find the best recipe for moist carrot cake along with the most delicious frosting ever! Note that the frosting is perhaps a little too much for one cake. In the picture I used around half the amount.

Recipe: Moist carrot cake with delicious lime cream cheese frosting
Ingredients
- 175 g carrots
- 2 egg
- 200 ml raw sugar
- 75 ml oil
- 100 g graham flour 150 ml
- 1 tsp baking powder
- 1 tsp cinnamon
- ½ tsp nutmeg
- 50 g shredded coconut 200 ml
- 50 g raisins 100 ml
- 50 g walnuts optional
Frosting
- 50 g butter softened
- 150 g powdered sugar
- 1 tsp vanilla sugar
- 1 lime use the zest and half the lime juice
- 200 g cream cheese
Instructions
- Finely grate the carrots and set aside
- Whisk eggs and sugar to a thick and creamy mixture
- Slowly whisk down the oil
- Mix all remaining dry ingredients in a separate bowl and then add that and the carrots to the wet mixture
- Grease and flour a suitable baking pan (you can replace flour with more shredded coconut)
- Pour cake batter into the pan and even it out before placing in the middle of the oven at 180°C (350°F).
- Bake for 20-25 min
- Let it cool
Frosting
- Mix/whisk all ingredients
- Spread over the cake once cooled (you can place the frosting in the fridge while waiting for the cake to cool)
- Serve cake cooled or in room temperature
