Recipe: Red lentil soup with spinach

Lentil soup with spinach In many countries it is a tradition to eat Lentil soup on New year’s day in hope of bringing you lots of money in the new year. Countries with this tradition are: Hungary, Italy, Brazil, Czech republic and Slovakia. Here’s a recipe for a yummy lentil soup with spinach.

Recipe: Red lentil soup with spinach

Ingredients
  

  • 200 ml red lentils
  • 1 l water
  • 1 onion
  • 2 garlic cloves
  • 2 tbsp oil
  • 1 cinnamon stick
  • 3 bay leaves
  • ½ tsp mustard seeds
  • ¼ tsp white pepper
  • ½ tsp smoked paprika powder
  • ½ tsp curry
  • 250 g crushed tomatoes
  • 100 g frozen spinach
  • 2 tsp salt
  • 1 lemon

Instructions
 

  • Rinse the lentils and place in a pot with the water
  • Boil under a lid for 30 min until they are soft
  • During that time you can finely chop the onion and garlic
  • Take a big pot and fry it in some oil until translucent, then add all the spices (except salt) and the crushed tomatoes
  • Stir and let it simmer for 10 min
  • Add the frozen spinach and boil another 10 min
  • Add the lentils (and all liquid), stir and add the salt
  • Serve the soup hot with a big piece of lemon for each serving. The lemon slice should be squeezed into the soup before eating
