Swedish sour milk bread

Fillimpa (Swedish sour milk bread) is a typical Swedish bread that can be altered quite a lot depending on what you prefer or have at home. In this recipe we have included some typical Christmas spices; ginger, clove, cinnamon & cardamom.

Recipe: Swedish sour milk bread tasting like Christmas

Ingredients
  

  • 500 ml wheat flour 250 g
  • 300 ml graham flour 150 g
  • 400 ml sifted rye flour 200 g
  • 250 ml crushed rye 125 g
  • 100 ml wheat pollard 50 g
  • 50 ml rolled oats
  • 1 tsp salt
  • 4 tsp bicarbonate
  • 50 ml crushed walnuts
  • 100 ml raisins
  • 1 l sour milk you can use buttermilk
  • 200 ml dark syrup/treacle

Christmas spice mix

  • 1 tbsp ground ginger
  • ½ tbsp ground clove
  • 1 tbsp ground cinnamon
  • ½ tbsp ground cardamom

Instructions
 

  • Heat oven to 175°C (350°F)
  • Mix all dry ingredients in a big bowl
  • Then add the sour milk and syrup and mix well
  • Grease and flour two 1½ liter bread forms (you can use crushed rye or panko/breadcrumbs for this)
  • Pour in the mixture evenly and then bake in the lower part of the oven for 1 hour and 20 minutes
  • Take out, cover with a towel and let it cool
