A super quick weeknight hero if you have some fresh mint from the garden or happen to have some in the freezer. Green peas are a surprisingly good fit with mint. After you have tried this, then you’ll always want to keep some mint and green peas in your freezer 🙂

Green pea soup with mint
Ingredients
- 1 shallot
- 1 tbsp olive oil
- 300 g frozen green peas
- 350 ml vegetable bouillon
- 2 tbsp mint chopped fresh leaves
- salt
- black pepper
- 50 ml sour cream
- mint leaves
Instructions
- Peel and chop the shallot before frying in oil in a big pot
- Add bouillon, peas and mint and bring to a boil. Then simmer for around 3 min
- Make it smooth with a hand blender and add salt and pepper to your taste
- Serve with some fresh mint leaves as garnish and a dollop of sour cream
