Green pea soup with mint

A super quick weeknight hero if you have some fresh mint from the garden or happen to have some in the freezer. Green peas are a surprisingly good fit with mint. After you have tried this, then you’ll always want to keep some mint and green peas in your freezer 🙂

Servings 4

Ingredients
  

  • 1 shallot
  • 1 tbsp olive oil
  • 300 g frozen green peas
  • 350 ml vegetable bouillon
  • 2 tbsp mint chopped fresh leaves
  • salt
  • black pepper
  • 50 ml sour cream
  • mint leaves

Instructions
 

  • Peel and chop the shallot before frying in oil in a big pot
  • Add bouillon, peas and mint and bring to a boil. Then simmer for around 3 min
  • Make it smooth with a hand blender and add salt and pepper to your taste
  • Serve with some fresh mint leaves as garnish and a dollop of sour cream
