Recipe: Swedish ugnspannkaka or fläskpannkaka (oven pancake with pork)

ugnspannkaka eller fläskpannkaka

Ugnspannkaka (oven pancake) is a classic recipe for pancake in Sweden even though that thin pancakes are made more frequently in peoples’ homes. The most classic recipe for ugnspannkaka is with pork belly or bacon and is sometimes called fläskpannkaka (pork pancake). Skip the pork and you have a vegetarian version that works well also as dessert.

 

This recipe is so easy with the proportions that you should not need a recipe the next time 🙂

Recipe: Swedish ugnspannkaka (oven pancake with pork)

Ingredients
  

  • 200 g flour 400 ml
  • 800 ml milk
  • 4 eggs
  • 200 g pork belly or bacon
  • ½ tsp salt
  • 25-50 g butter

Serve with

  • lingonberry jam
  • Grated carrots optional
  • Grated cabbage optional

Instructions
 

  • Cut the pork in small cubes and distribute them evenly on an oven pan
  • Place the pan in the oven and turn the heat on 225°C (435°F)
  • While the oven is heating up whisk together the flour and milk before adding the eggs
  • Take out the pan when the pork is ready and add the butter
  • Spread out the butter and pork evenly before adding the batter
  • Cook in the lower part of the oven for around 30 min until golden brown, The middle of the pan usually takes the longest to get ready.
  • Serve with lingonberry jam and some grated carrot and/or cabbage

    Great recipe! I sometimes substitute the bacon for pepperoni and serve it with salsa. And when I half the recipe, it’s perfect for my 10” cast iron frying pan.

    Thank you for the recipe. I’m married to a Swedish man and moved here in Northern Sweden. I’m learning to cook most of their recipes. I also make homemade lingon sylt
    This one is now my quick menu when running out of time to cook. And the carrot salad is as easy to make as well. Awesome
