Recipe: Lilian’s moist banana cake

Moist banana cake

The most searched recipe in 2014 was “Banana bread”. I don’t really know why it is called “bread” though, in my mind it is more suitable to call it Banana cake. It is really difficult to find the best recipe online for moist banana cake since there are so many that claim to be the best ever.

The creation of this recipe happened like in most other cases, it started out from those recipes that sounded most promising and then changing the quantities and the instructions to the better 🙂 It was created by my wife Lilian and is now one of our absolute favorite cakes. I think the flavors also work great now in times of Christmas!

Moist banana cake

Recipe: Lilian's moist banana cake

Ingredients
  

  • 3 ripe bananas should be on the brown side
  • 200 g sugar 200 ml
  • 3 eggs
  • 100 g melted butter
  • 125 g flour 250 ml
  • 2 tsp baking powder
  • ½ tsp salt
  • 2 tsp cinnamon
  • 100 g raisins
  • 100 g walnuts

Instructions
 

  • Heat the oven to 175°C (350°F)
  • Mash the bananas completely
  • Take a big bowl and whisk the eggs with sugar until fluffy and then add the butter
  • In a separate bowl mix the dry ingredients (except walnuts and raisins)
  • Pour in half of the dry ingredients in the egg mixture and stir it together
  • Now stir in the mashed bananas before adding the rest of the dry ingredients
  • Finally add the raisins and crushed walnuts
  • Grease and flour your cake pan (we use bundt cake pan for more even cooking)
  • Pour the cake mixture in and bake for 35 min
