We are eating more and more vegetarian meals, but tend to run out of new interesting and easy veggie recipes that aren’t just a salad or something that does not look like a fulfilling meal. It should also be something that can be made quickly for a weeknight dinner. Since I already had created this fine long list of 100 veggie food bloggers, I got to the task to go through everyone one of them to find a recipe from each blogger that could be made in 30 min or less and that I thought would taste great.
